Sorry, when I opened the container my mind quickly went from taking a photo of this sandwich to diving in and tasting it.  Three or Four bites later, ‘Oh, photo.’

The couple moved from Biloxi, Mississippi to Brewer Maine last fall and began with a catering company, that mostly provided lunches for bigger companies in the Bangor – Brewer area. They also did a grab-and-go meal prep service where they prepared food for you to heat and serve at home.

Now they have opened as a restaurant. Lunch yesterday was a steady stream of Mainers, and transplanted Southerners streaming in and excitedly ordering mostly carry-out food.  There are tables, a counter, and a couple of picnic tables out front for dining as well.

The way they determine their menu is interesting too.

It changes every week.  Sunday afternoon they write the changes that are planned for the week on the menu chalkboard. Here is this week’s offering.

They are open Monday to Friday from 11 a.m. to 6 p.m. (except Tuesdays when they close at 2 p.m.)

The food is absolutely authentic Southern cuisine. Jambalaya. Gumbo. Shrimp and Grits. Etouffee. Muffulettas  And more.

And the service is southern too.  You’ll be called Sir or Ma’am in every sentence, with a Y’all thrown in every so often too.
