My Husband and I Have a Garden But We Purposely Don't Plant Zucchini

My husband's garden is flourishing this year, with a huge crop of tomatoes getting ready to ripen, cukes, summer squash, pumpkins, and more. One thing we don't plant is zucchini because we know that there will be an abundance of them given to us by neighbors and coworkers. Everyone who plants zucchini gets more than they can use, so they ask everyone they know, 'Do you need any zucchini?' If you've ever turned them down, think twice before doing it again.

I know they're usually huge and awkward to store. And not everyone likes sauteed zucchini as a side dish. But zucchini is an incredibly versatile vegetable, that can be used in everything from breakfast dishes to baked goods. I did a little research with my family and friends and was amazed at how many ideas they came up with. I constructed a list and linked each item to a recipe. But don't be afraid to Google it yourself and find one that fits your tastes. (Siri, how do you make zucchini bread?)  You'll want to have zucchini in your pantry year-round. And you probably know plenty of people who can help you get one or two...or five.

Are the Recipes Difficult?

As I started compiling the list, I was amazed at the many recipes I'd never considered with zucchini. Who would think of using zucchini in waffles, cookies, or salsa? I mean, the possibilities are endless. Some of the recipes are simple, others are a bit more complicated. Take a look and pull the ones you want to try. I have a feeling you're going to love them.
